Well am sharing this one. I was expecting raw chicken to cook last night and got some cubed beef. The final result was very delicious. So delicious that I offered the relatives money to go out for a kebab so that hubby and I could trough the lot. Sadly they refused to leave.
Enough for 4 – 5 people.
1/2 kilo of cubed fairly lean beef. I cut the cubes into halves or quarters so you get really small thin pieces of beef.
A large onion. Peeled and diced I to quite big chunks.
4 large cloves of garlic….peeled and sliced
3 green peppers. I used 2 of the long hot ones with the dark green skins and 1 lighter coloured. Wash and slice them……
1 tablespoon of tomato purée
2 tablespoons of honey
1/2 a teaspoon if red pepper flakes. Cayenne would probably do but add to taste. Paprika might be a close alternative.
225ml boiling water
Salt & black pepper
1/2 teaspoon of dry ginger
Add a good slosh of olive or sunflower oil to a deep frying pan. Heat the oil
Add the meat and a shake of salt and pepper and the ginger. Fry until the red colour has gone from all the pieces.
Add the peppers, onions and garlic and keep stirring until the onion is going clear.
Dissolve the honey and tomato purée in the hot water. Pour into pan. move pan onto a very low heat and simmer for 30 minutes. stirring occasionally. Taste and add extra salt if needed and too up with a little extra water if you want a wetter dish.
I served mine with rice…..and raw onion slices.
Just typing that I could eat it all again now.
